  Cut from the round and neck they are moderately lean and thus very tasty. Essential for "Blanquette de Veau", or any long-cooked stew. Especially tasty with carrots and onions as they will add plenty of sweetness.

Slice one escalope across into three to four steaks then pounded with a meat tenderiser (or the flat end of a large knife) to make delicately thin slices. These can be fried as is or breaded beforehand - add either lemon, white wine, marsala, cream, mushrooms to make a sauce. Alternatively you can roll them with prosciutto and sage before frying to make saltimbocca alla Romana.

All our veal come from Irelandl from the South-West, the same farms where our fantastic Black Angus steers are raised.

It is darker in coulour as its outside, free range up to 6 months and no hormones and growth promoters are allowed in its production.
