Stellenbosch has long been South Africa's answer to Bordeaux - a bastion of elegant, classic wines made from well-known grape varieties such as Cabernet Sauvignon. And Stellenrust, which was first registered to Dutch settlers in 1692, has been part of the scene pretty much since the vinous industry began. But among all the pervading tradition, this bottling from young winemakers Tertius Boshoff and Herman du Preez is something entirely different - proof that the region can take on the maverick wineries from the innovative Swartland further north. Made from rare White Cinsault, planted in 1972 in unirrigated granite soils in the Bottelary Hills, it is often mistaken for a white Rhone wine in blind tastings. Yet with aromatics of apricot and peach, and flavours of pear drop, it's unmistakably unique. Try it with smoked salmon in a brown butter sauce or vegetarian dishes, where all that fruitiness will hold up beautifully.
