Pure Azul Whisky from One-Star State. Balcones Distillery is a small establishment with big ideas and an array of awards. They are leading a small Spirit revolution from Waco, Texas, where rivers of top-notch hooch are flowing: rugged Bourbons and delicious Single Malts that are bound to redefine what an American Whiskey can be. One of their masterpieces is a wonderful True Blue -- made from blue corn, no relation to "Heisenberg's ice." Blue Corn is also known as Rio Grande Blue and it grows in Mexico and the Southwestern US. It has a sweet flavor and is usually used to make tortillas. It's one of the reasons we can talk about terroir with this azure Whisky. It's a truly powerful dram, diluted town to 100 proof and it presents us with a complex and soft character, perfect both straight or with a splash of water.
