Cut from the flat end of the brisket, this cut has a consistent depth and shape which makes it ideal for slow smoking on the BBQ. We've prepared it with a smoky BBQ marinade to complement beef, with a natural depth of flavour thanks to the dry-ageing process. After slow cooking, pull the meat apart with two forks and pile into floury buns. Cooking Instructions: 1. Allow the brisket to get to room temperature by leaving out of the fridge for at least 30 minutes. 2. Preheat your oven to 170degC/150degC fan/gas mark 3. 3. Place the brisket on a sheet of tin foil and crimp at the top, to ensure the brisket isn't exposed in the oven. 4. Roast for 3 1/2 - 4 hours (the brisket should be very tender at this point)
