Founded in 1933 by six locals, cooperative Cantina Negrar was formed as an effort to defend the Valpolicella and Veronese wine-growing areas from speculative development. Their vineyards now encompass over 133 hectares, tended by 230 winemaking families using sustainable means. A sister sipper to the hugely popular Foscarino Soave, this bottling is part of the Domini Veneti collection of wines, which explores different Italian regional crus. Castellaro comes from the local word 'Castellarum', the hillside forts that were historically built to protect certain valleys. Part-ageing in French oak gives it enhanced character.
