Our Hot Smoked Side of Salmon is the perfect appetiser. Hot smoking involves initially cooking the salmon over an open fire. Sawdust is then added to reduce the flames and allow the smoke to envelop the fish, developing its subtle but delicious flavour. In total this process takes 1-2 hours. This traditional smoking method ensures the product remains juicy and succulent with just a hint of smokiness, and is ready to eat hot or cold. We source all of our smoked fish from Brown & Forrest, a small, family run Smokery. Founded by Jess Pattison in 1981 after he learnt the craft of hot smoking in Germany the year before, the family have maintained the artisanal and family run nature of the business ever since. Our Scottish farmed salmon is sourced from tidal lochs on the Scottish coast and Isles, swimming against strong currents to yield rich, bright fillets.
