One of France's most celebrated Champagne producers, Perrier-Jouet is known for more than its fantastic fizz. The house - founded by Pierre-Nicolas Perrier and Rose-Adelaide Jouet in 1811 - promotes regenerative viticulture, which means carefully tending soils, installing beehives and creating safe spaces for local fauna to thrive. Cellar master Severine Frerson is the first woman heading the wine production team here, and her Grand Brut comes rich with notes of yellow apple, honey, citrus and warm brioche. Its lingering flavours of sun-ripened lemon and grapefruit will pair well with fish, white meats or tofu dishes.
