Aromatic Pecorino is a centuries-old Italian grape. Its home is in the rolling hills of Marche and Abruzzo, close to the Adriatic Sea. Nestled in the borders of these regions sits Offida DOCG - here is where you'll find the cream of the crop. Saladini Pilastri were one of the first winemaking estates in Italy to convert to organic farming. If you haven't tried Pecorino before, this fantastic bottle is deserving of a place in your collection alongside Gavi and Sauvignon Blanc. It's bright and full of character, with notes of citrus, white peach, pear and tropical fruit. The energising minerality makes it a wonderfully refreshing wine. Try it with soft cheeses.
