Shh'annu is the tastiest lamb in the UK! Says who? Says Michelin Star chefs! and who is better to judge than top chefs? All lambs (or most of them) sell out each year to Michelin Star restaurants but some cuts are available here on the Real Food Hub. Shh'annu is both tasty and tender. Several chefs say shh'annu is the best they've ever tasted. Shh'annu is a technique not a breed, although a unique composite breed has been developed specially for better taste. Hanging, and age of animal, are as important as breed. The lambs are farmed on a regenerative/organic basis, growing slowly and naturally. All animals are grass fed, using minimal drugs, antibiotics, supplements, vaccines, chemicals and fertilizers ie in harmony with nature. The shoulder is often described as the tastiest and most succulent meat, although it's shape means it suits roasting best, sometimes slowly depending on taste. Shh'annu will be supplied frozen.
