An award-winning Spirit of the Mayan. When it was ceremony time, the Mayans didn't just grab the closest drink - they took the holy liquor of Pox (pronounced 'poshe'). It means medicine in Tzotzil, and it's traditionally made of corn, sugar cane, and wheat. What a combo! It's not Mezcal, it's not Tequila; Pox is unique and can't be compared to anything else. And how do they make it? Well, the original Chiapas recipe says you need to crush and boil sugarcane and make piloncillo, dry the corn (this beaut uses white, red, yellow, and black varieties), mix it with water and wheat, and let it ferment for a fortnight. Distill it twice, and cut it with water - this one's at 42.2% ABV. Pro tip from the Chiapas region: chew a coffee bean before taking a sip of Pox. Siglo Cero Pox, made by Innovacion Licorera since 2010, is 44% corn, 28% wheat bran, 20% sugar cane, and 8% piloncillo. It's an intriguing ancient elixir with a delicate sweet'n'spicy character. It's the first brand of Pox to be sold legally, and it won silver at the 2018 San Francisco World Spirits Competition.
