The Walled Garden Underground Restaurant in Manchester is a unique culinary experience. A full time project serving12 course tasting menus, four nights a week, by pre-booked tickets. The focus is on delicious, creative food in informal, sociable setting with guests seated around a communal table. " I cook for just eight guests a night, making everything myself in house (from the bread to the complex vacuum distillations) and I get to meet and serve all the guest in person - something that would be impossible in most restaurants. Cooking this way, without the weight of a traditional restaurant, investors or staff, gives you a lot of creative freedom and allows you to be dynamic. Of course its it is also extremely hard work and very long hours, but I love working this way, and when it is your own project the satisfaction from making everything from scratch, serving the guests and seeking their reactions is incredibly rewarding. But crucially the main focus is on flavour. Everything has to taste fantastic and ultimately the formula is simple, I want my guests to have fun and eat some delicious food. The recipes in this book are some of my favourite dishes that have been part of the tasting menu at The Walled Garden.
