Reared locally to us by Chris and his family, our ducks are dry plucked and waxed for an exceptional finish. They are completely free-range and have zero miles to slaughter. Free to roam on grassy fields and maturing at their natural rate, our ducks are the healthiest and happiest they can be, living under the highest standards of animal welfare. Due to the way these birds are reared, they develop a sweet and tender meat, with a gentle ocre hue in the skin from the rich diet they enjoy, adding a touch of warmth to your Easter table. Dry-plucking our birds means they are never immersed into hot water (as they would be in the conventional plucking process). A benefit of this is that they can be game-hang in chambers with no risk of spoilage, where the proteins soften, the flavour enriches and the skin dries to create the perfect crisp when roasting.
