Racks of lamb are cut from the 'best end' of the animal, named as such because it is the most tender part of the loin. A fantastic Easter centrepiece, it's important to sear the rack in a very hot pan before placing in the oven to render the fat until crisp and golden, and then rest before service. We source our lamb and mutton from a selection of farms in the West Country, depending on availability and quality. All our lamb is slow-reared and grass-fed, from independent farmers that uphold the highest standards of animal welfare. Sourced from traditional breeds of hill sheep that have spent at least one season at grass, we ensure we get the best quality meat with incredible depth of flavour. Serves 2-3 This product is only available for delivery on our Easter delivery dates (Wed 27 March, Thu 28 March, Sat 30 March 2024).
