These are boneless portions from the belly fillet. They're not as thick as the steaks from the top fillet, but they are nevertheless very handsome pieces of fish, and rich in the natural oils which are always concentrated in the belly flesh. Gourmets might consider this the most desirable cut of this superb fish, Despite the downside - the belly flesh is rarely worm free. But the worms are truly frozen to death and cannot hurt you.
